Course Overview

The course is suitable for anyone who wants a guided introduction to patisserie. The course is a great foundation for you to go on and develop your skills either at home in your own kitchen or within a professional environment. Perfect for beginners or improving and refining your skills giving you the confidence to recreate dishes.

This course makes use of the incredible facilities of The Quantock Restaurant. The day will be packed full of hands on activities focussing creating petit fours.

Units of study/what is involved:

During the day you will create chocolate truffles, macarons, choux pastry, fudge, Florentines. By the end of the day you will be able to replicate these in your own home and understand the quality points in order to develop your own showstopping finale to any dinner party.

We will provide you with a recipe booklet to use on the day as well as a booklet to take home with handy hints and tips especially created for this workshop. Don’t forget to bring a bag or box to carry all of your fabulous results home. Make sure you wear comfy shoes as you will be on your feet for the majority of the day and our kitchen uses induction hobs so please be aware that this may not be appropriate for anyone with a pacemaker. We will welcome you with a coffee, tea and have water available but please bring any other refreshments and lunch as there will not be anywhere to purchase food you may require.

Additional costs:

The costs for the course includes all of the ingredients you will be using throughout the day. Tea and coffee will be provided but please bring with you a packed lunch. You will be able to take all of your creations home to enjoy.

Assesment Methods

There will be full instruction on how to undertake each task and also a little recipe book to take home so you can carry on perfecting and developing your skills at home.
