Course Overview

This course is our highest point of entry for school leavers, and is designed for anyone who wishes to become a member of a professional team in a leading establishment. We hope to progress you onto the second year to develop skills. Your first year will be learning how to link commodities with technical skills and preparation techniques.

In your second year, you will have the opportunity to learn about the planning and organisation of a commercial business as well as hone your skills within your chosen area. You will be learning whilst working as part of a team within a busy kitchen and restaurant. Our employer engagement programme starts from day one and you will have the opportunity to build links and raise your knowledge and aspirations within the hospitality industry.

You will complete a work experience placement with the opportunity to explore the industry with prestigious employers that we have built successful relationships with. These include Scotts Richmond, Jumeriah Carlton Towers, The Kaleidoscope collection, and The Newt Somerset, amongst others.

In addition to the main qualification, in your first year you will undertake a Level 1 Certificate in Food & Beverage Service. This will involve learning about roles and responsibilities working in a variety of hospitality organisations in a customer-facing role. In your second year, you will learn about the supervisory responsibilities.

Assessment Methods

Your week will contain a combination of classroom and workshop lessons, as well as sessions in our commercial operation where your practical skills will be assessed.

You will complete written and practical assessments as well as coursework throughout the year.

You will work with professionals on our monthly guest chef nights, as well as experience a variety of visits to expand your knowledge of the industry.

You will meet numerous employers and guest speakers who will share experiences and give you an amazing insight into this professional career path.

Progression Options

This course is designed to be a preparation to the Level 2 Diploma in Professional Cookery.

Alternatively, you may be able to apply for an apprenticeship, which will be delivered over a minimum of 18 months. There are also many employment opportunities for qualified candidates within the catering and hospitality industry.

Entry Requirements

You need five GCSEs at grade 9 to 3 (English at grade 4) or an appropriate Level 1 qualification. You also need to show a real passion for the industry.
