Course Overview

This course is the second year of our professional cookery diploma, it is a progression option for those who have successfully completed the Level 1 Professional Cookery diploma and all elements.

This is aimed at anyone who is determined and motivated to develop their skills to become a professional chef or hospitality manager. It is designed to help you have a greater understanding of the key attributes needed to start a career within the hospitality industry therefore you need to possess a focus on the completion of tasks and collaboration with others to succeed.

The Level 2 concentrates on the range of commodities used within a professional setting using the technical skills related to processes and techniques acquired on the previous year of study. There is a high amount of classwork and theory completion at this level.

Your week will consist of theory and workshop lessons as well as directed study research. Your timetable will include at least one evening session within our realistic working environment, The Quantock Restaurant. You would also benefit from exposure to a part–time job within a professional hospitality environment to link those theoretical skills to a real life working environment.

In addition to the main qualification, you will undertake a Level 2 Certificate in Food & Beverage Service. This will involve learning about the organisation of a customer-facing role within the hospitality industry at a higher level. You will take part in event planning within our realistic working environment and will have opportunities to take ownership of particular tasks and activities such as cocktail creation and menu development.

  • Financial control within a kitchen
  • Legal and social responsibilities
  • Personal development and preparation for a range of careers
  • Impact of the Hospitality economy.

Assessment Methods

You will complete numerous written assignments and project work during the year which you will receive individual grades for. These grades will be used alongside numerous technical/practical assessment in order for you to receive an overall grade of Pass/Merit/Distinction.

Progression Options

Once you have successfully completed the course, you may progress to a higher level apprenticeship in Hospitality Supervision or Chef De Partie. Alternatively, we can support you into a relevant career.

Entry Requirements

You need to have completed the Level 1 Diploma in Professional Cookery in Professional Cookery and have GCSEs at grades 9 to 4 in maths and English.
